I've found that with any instrument, its important to pick music that stretches you, but also music that the student likes or loves to keep them interested and engaged. It can sometimes be hard work, so it's important that the result is you either accomplishing a goal and that could be in technic or learning a song that you love. For elementary school-aged students and younger who are just starting out, I will typically see if the student is familiar with, and a fan of, any classic or contemporary pop or rock music. If so, then basic chords and rudimentary music theory is where I like to start.
