Great music lessons are a mix of solid technique building and fun application of those skills. I always spend the first few lessons getting the student familiar with the basic technique of the instrument, and then quickly move on to duets, improvising, sight reading, solos, etc. that tie in with the current technique studies. I'm just starting out pursuing teaching as a professional. During my undergraduate degree, I gave some piano lessons to a next door neighbor, and also also tutored my professor's daughter in music theory. Those moments were crucial for developing what I want to be doing: infusing music lessons with music theory and composition. I am laid back teacher but at the same time expect the most out of my students. I stress the importance of daily practice, but at the same time try to make it a fun activity. I want the lesson space to be somewhere that student can be themselves, and always explain my reasons for having a student perform a certain task. Every student responds differently to a method of teaching. Some react better to being challenged while others respond better to encouragement and positive reinforcement. It is my responsibility to find the method for each student and adapt accordingly. Another factor that is not constant among all students is their pace.
