For orchestra students I usually use Essential Elements to begin for the first two to three years. I also use the Suzuki method and books for studying above what they are learning in the classroom. For voice and orchestra students I also find out what they are most interested in and what styles they want to learn and incorporate that into my lessons as well. Every student has a different learning style and learns at their own pace. I myself am a tactile kinesthetic learner and tend to teach this way.
