For children 7-11, I suggest a fundamentals book like Standard of Excellence or Accent on Achievement. Later, I will introduce an exercise book called the Rubank's Method, which helps with articulation and technical skill. I also will ask the student to pick a fun songbook which they will be motivated to practice.
