I always begin a lesson with having the student play a song/piece of their choice, so that they can feel confident and comfortable in their own skin and in the lesson space. I have taught toddlers as well as adults since then off and on but am looking to start to teach more consistently and regularly. I start beginners off with the Rubank Elementary Method, which introduces reading, scales, arpeggios, and expressive devices such as dynamics and articulation. I also like students to start with improvisation, composition, and ear training as soon as possible. I encourage them to both work on whatever repertoire interests them and find new types of music they don't know they're interested in yet. For young beginners I typically with Suzuki Book 1 or the Abracadabra Flute Book.  For children preparing for NYSMA I use the Rubank method with supplements from Forty Little Pieces and gradually move on to more solo repertoire.  For adult students I make repertoire selections based on students' interests while taking care to keep lessons both engaging and fun no matter their starting level.  Although my training is primarily classical, I am happy to incorporate music from other genres into lessons.
