For adults, I see where they are and use adult beginning books or other appropriate material depending on their interests. I usually start each student learning their major chords through the keys as soon as they are physically able, because once you learn your chords, sight reading and other playing becomes much easier. i also teach scales because if you can play your scales you can learn to play in all different keys. If a student has trouble with a particular concept, I might write an additional lesson for the student to get extra practice. For very young students, I create fun exercises in order to hold their interest.
