For piano, I use Faber instructional books for piano. I teach music theory which include but not limited to scales, rhythm, etc. I give instruction on music vocabulary and literature. Furthermore, students learn some music history which includes the different eras and composers. Also, I teach vocal pedagogy which includes but not limited to breathing and phonation. I believe in individualized learning. So each student will receive their own plan for their progression. Some materials I recommend for students are the rubank book for beginner. It is very important for students to grasp the fundamentals. For intermediate students, we would progress on a track and focus on what they had for goals. I'm very big on motivation. I tell my students from day one how great there doing and give them something to work towards. For example if I have a guitar student that really wants to be a lead guitarist I will play the solo of one of there favorite songs and teach them a small part of it or all of it if they are at an advanced level.
