For beginning students (regardless of age instrument) I try to simplify the approach and work on a set of warm ups/exercises coupled with a performance piece or song that they can feel good about and lots of fun listening assignments. We create a practice schedule based on the student's school and extracurricular activities and try to follow that schedule as much as possible.
