I will start my beginner piano lessons with "Teaching Little Fingers to Play" "John Thompson's Easiest Piano Course Part I." Basic music theory such as determining lines spaces (Every Good Boy Deserves Fudge F.A.C.E) and basic 1-5 fingering patterns.
