I generally use Hal Leonard's Essential Elements for students new to the clarinet then progress to Baermann Scale Studies as well as several different methods depending on the student's ability. In addition to etudes, solo repertoire is introduced, also based on the student's ability. Whenever I can I play duets with the students. It makes what they're doing sound more like music. And I make mistakes. That shows that mistakes are no big deal (1 wrong note is a mistake.
