Everybody's experience with music is different and not everybody will pick things up as quickly as others so you must meet them where they are. Music is nerve-racking at first because expressing ourselves isn't something that is always encouraged so I look for something they are interested in to start off. For adult piano students I use the Older Beginner Piano Course by Bastien. Again, if they wish to continue with previously studied materials, I am more than happy to comply with that.
