I typically use the Alfred method, although I still like John Thompson, and I also like the Faber method. For adults, I like to use the Alfred books that are specifically for them. If a student comes in knowing absolutely nothing about music, I will start with teaching basic music theory. Extensive knowledge of music theory is not essential, but a basic grasp will make the learning process much smoother. From there - for stringed instruments - we'll move onto hand conditioning.
