I usually find out the student's musical preferences and try to pick songs from that style, meanwhile, introducing them to classical music or folk music and helping them pick music to work on from that genre.  I follow a similar pattern with flute lessons. As far as my methods, I like a healthy, fun approach. I like to keep my students engaged while teaching them proper voice technique. While working with soloist, I focus on the strength of that singer. We will work on what they are good at and make it even better. Also, anything that the student is struggling with, I like to try various methods until the student understands.
