For beginning students, I typically use one method book and one book of simple melodies.  My preferred method book is the Rubank series. The method book teaches the basics, while the melodies and songs keep things fresh and interesting for the student so they want to continue.  For advanced students, I find significant, staple pieces that any advanced musician should have in their repertoire.  This keeps the student engaged, and prepares them for anything down the road in their musical careers. However, I will typically move students through the method book quickly and get right into performance repertoire that is appropriate for their age and level. For beginners who are children I will start with the fundamentals of the instrument (flute or sax) and then from there will introduce solo repertoire appropriate for their level. With adults I like to find out what styles of music they are interested in and instruct them with that in mind to keep the lessons fun and enjoyable while still educational.
