I use both classics and popular songs to teach reading, theory, ear-training, and improvisation. I teach all of my lessons differently- custom tailoring each one to the students (and parent's) wants, needs, and personal learning style. For intermediate and advanced students, I like to figure out what kind of popular music (rock, blues, jazz, pop) that they would like to play and learn more about, and then learn repetoire or basic techniques in that particular genre. Again, I specialize mainly in popular styles, and am not much of a classical player.
