If an adult wants to learn pieces to sing in church, I will offer my skills as a classical singer and professional church choir section leader to teach them how to sing beautiful melodies and passionate contemporary songs. I allow each student to progress at his or her own pace. I set realistic goals at each lesson in terms of technique. piano repertoire and theory. I make journal entries at every lesson to record what was covered. I encourage students to participate in recitals and can make arrangements for them to perform, as I beieve that public performance is an important milestone in their musical education. If the student is interested in jazz, I typically use Jim Snidero's "Jazz Conception" books as a great starting place to learn about interpreting jazz music as well as a basis for starting to talk about improvisation. Continuing from there, jazz students will start to learn jazz "standards" from the Great American Songbook and discussions of improvisation will go deeper.
