I always begin a lesson with having the student play a song/piece of their choice, so that they can feel confident and comfortable in their own skin and in the lesson space. For wind instruments, long tones and scales will occur at the beginning of the lesson, and will be followed by study of an etude and/or piece of repertoire. I will ask the student to sing through the piece, so that the student can make a connection with their own voice and with the music, followed by the student reading through the piece with their instrument. If they seem to have an emotional story to tell, I will pick a song on the spot to reflect how they feel that day. I am a big believer in the breath. For a beginner I do a lot of exercises with breath connection to encourage healthy, connected singing. I like the idea that the voice dances on the breath and is buoyed and protected by that technique. I am also a very physical teacher, encouraging students to use their whole body in the act of singing. The voice is carried by the whole body and not just the muscles that are the vocal chords.
