For beginning students who are children, I usually start with a songbook, such as the Accent on Achievement method book. Once the student has a grasp on the fundamentals, I begin to introduce solo repertoire. For adult students, I try to find out what the student is interested in pursuing, and then if they are a beginner, I teach fundamentals through the Rubank method books and supplement with songs that are approapriate to the student's taste. I encourage hardwork and try to be prodding by making it clear that practicing is the only way to retain the concepts but I am not "strict." My beginnings as a teacher go back to my undergrad in Puerto Rico where I would teach in a music academy with students from ages 10-17. As my academic life expanded I moved to Florida where I was the Teacher Assistant for my Masters degree for 2 years. There I taught college level students from all ages in classical music.
