With my piano students, I prefer to use John Thompson’s piano method books, along with performance study, listening, and impromptu music theory/acoustics lessons when the subjects arise. Depending on the practice habits of the student, they should have at least 2-3 non-method book solo pieces prepared within a year’s time. For beginning students, around ages 5-9, I start with easy songs, but also teach them how singing works. I like to teach technique, and help students improve in their singing. Once students have grasped the fundamentals of singing, I'll let them start looking at solo repertoire so they can practice for a recital performance.
