For any level I like to check to see if they have a solid enough grasp on fundamentals. For drum kit users I like to only have the kick drum, snare and hi-hat available. If its a more experienced player, I like to have them play a simple groove just to see where they are and tailor how I teach them to most benefit where they would like to go in their journey. I believe that drum has to start with the basics, I used to practice at least one hour a day every day for over 10 years. I still practice on a regular basis with my pads and on my drums. So many drummers you see today are not schooled and its a shame. if you start with a good solid foundation you can be the best there is.
