For piano, I use Faber instructional books for piano. I teach music theory which include but not limited to scales, rhythm, etc. I give instruction on music vocabulary and literature. Furthermore, students learn some music history which includes the different eras and composers. Also, I teach vocal pedagogy which includes but not limited to breathing and phonation. For beginner students who are children, I usually use Faber and faber method series or the Alfred method series. All curriculum is based on age, so that it will help students learn at their own pace and level. Once the student gets to a certain point, I start adding in fun pieces that the child suggest, or might like, to add to what he or she is already learning.
