I also strongly emphasise a student's ear training as that really opens up the instrument to them, allowing for more intuitive playing and improved creativity. For beginners, I find what bands and music they are interested in and then pick some songs that will be easy for them to get started on quickly. I also try to incorporate basic music reading and notation, especially with younger students.
