For older and/or more advanced students, I like to create a balance of tone warm ups, scale work, etudes, and musical rep. I encourage students to bring pieces they are interested in learning into their lessons. If a student is also interested in non-classical music (e.g. Disney tunes, Celtic music, pop, jazz, etc.), I find music in those genres at their playing level for them to enjoy. With beginners and especially children, I only assume that one's knowledge of the guitar is at best at a basic level. I'll begin by teaching how to hold the instrument as well as posture. Also I'll teach basic strumming patterns for the student to get familiar with the guitar.
