Once the children know the music alphabet, they can play any song they like. With advanced students, I start from what they know already and continue to explore all musical elements. Both methods provide emphasis on intervalic reading of notes, in addition to learning the specific names of all notes in both clefs. For adult beginners, I typically use "Play by Choice" or the Robyn Method.
